MES and AMAZEN

I placed an order for the AMNPS last week and received it Saturday. I had a pork butt in the smoker when it arrived, so I was already comitted to adding chips every so often. Those days are gone now... Can't wait to use it! Looking forward to smoking some cheese. 

Question. When cold smoking with the MES, how do you monitor the internal temp of the smoker? I don't have a seperate digital thermometer, so the only way I see is to turn it on, but don't set temp or time on the MES. Will that work or do I need to have a seperate thermometer?
I would get a seperate thermometer.
 
 
Thanks I definitely need to get one of these....I've tried putting chips in a pan, the soldering iron/soup can deal which works better than the chip pan, but I want smoke that I don't have to constantly monitor

Doug, I bought a digital meat thermometer as well as a digital thermometer/hygrometer at Walmart.....the first digital meat thermometer worked ok but wasn't accurate...was about 10 degress off...I just took it back and got another, and its dead on with boiling water....I then put it in my smoker on low along with the probe from the other thermometer, both read the same temp....and both read the same temp in my house within a degree of what my thermostat is.....so they are pretty accurate....not sure how to test the hygrometer though......I have an analog one that reads about the same setting as the digital so I assume its fairly accurate too

Anyway, the meat thermometer was $16 and the other was $9 I think....you could use the thermometer/hygrometer by dropping the probe down the vent hole....just keep in mind, its range is only up to 158, but if you're cold smoking, then it's not a problem
 
I leave my MES turned off and use one of my thermometer probes stuck through a potato on the rack. Not sure about leaving the MES on but I don't see how it could hurt.
 
If it were me I would just go ahead & get a second thermometer.

It's always good to have a back up anyway.
 
I was going to try to smoke some cheese today, but the weather here didn't cooperate. I will probably be getting a seperate thermometer for a back up if nothing else. I have a thermometer I will stick in through the vent to monitor temps in the mean time.     As long as the MES doesn't heat up once it's on, I should be OK. Baby Backs tomorrow, so the cheese will have to wait.
