So I am helping out a good friend who wants to get started smoking and he is looking at the same setup I recently bought which is the MES 30 (older windowless version), the AMNPS and Mav ET732.

I was telling him he may want to consider the larger MES 40, but that it is more expensive. I was telling him if you do ribs in the 30 you have to cut the rack in half as a full rack will not fit in the 30 (or so I have been told,I haven't done ribs yet).

Anyways, he asked if the same was true about a brisket since they are usually a pretty large cut and come to think of it, I hadn't thought of that and honestly have no idea since I've only done pork shoulder at this point and nothing else.

So..... have any of you MES 30 owners had to cut your briskets to fit them in the 30?

Depends on the size, if its a full with point and flat it could be tight.  He can alway separate the point from the flat.
