Brined hens for 24 hours in salt and sugar dry rub from a store. 230 for 2 hrs then raised temp to 265 for 30 min. Turned out awesome.

Looks great! I ordered the MES 40 for fathers day but waiting for it to come off back order. Can't wait to get my first smoke going.
