For Christmas Eve, we were trying to do pickie-food as opposed to an all-out meal. We had some ground beef that was asking to be used and I’ve been wanting to try moinks.

The wife made her famous meatballs (I don’t even know what she puts in them but they’re delicious) and I started putting half strips of bacon on them.

Smoked them on the WSM with some apple wood. I don’t know how many there were but used just over 2lbs of meat.

Took just under an hour to get them up to 145-150 and basted them with Sweet Baby Rays for another half hour until they were at 160.

Yes, there are a few without bacon as I had more meatballs than bacon. I’ve already had a few before the guests arrive and they are everything people have been raving about. Will definitely do these again. Thanks for looking and merry Christmas to everyone!!!
