Memorial Day Smoke

(BRISKET)

Just wanted to put this out there for all the Newbies and Members that are still a little reluctant to try a Brisket.

DON’T let that Brisket intimidate you, or listen to people that tell you how hard they are to smoke. Nonsense !!

The first thing I learned to smoke was a Brisket. Back then BBQ was brisket and I loved it (still do).

Before we had internet, smart phones, tones of information everywhere about BBQ you had to ask, watch and learn, then go home and practice.

But bottom line Brisket is not that hard to get right. Most people “Over Think It”, and get too carried away with what temp it is at 2 hours, 4 hours, etc. and really get excited at the stall.

I didn’t know it was called “The Stall” till about 10 years ago. I never really thought about it till I started reading all the info.

Probably my favorite thing to say on here is “Get To Know Your Smoker” whether it’s Brisket, Ribs, Chicken, Pork Butt etc. if you are just learning to smoke or have a new smoker spend some time playing with it to see how to regulate your heat.

Once you get comfortable, smoking will be easy.

Thanks Al, you got a big cook planed ?  I'm not sure what all I be smoking My wife volunteered me to smoke ribs and chicken for the neighbor and (Not sure yet) for one of the sub contractors that works for the company She is with.

Hadn't even thought about my stuff !!

Gary is right !!! Don't worry yourself to death about the brisket.
Besides doing snacksticks and summer sausage, my very first smoke was a 16 lb. brisket for my father in law. Turned out AWESOME. I do recommend reading a little something about them first though.
 
You know after reading all the threads Gary has written up about brisket, I'm thinking most anybody should be able to BBQ one.  As I once told Gary, I've only eaten  brisket once in my lifetime.  It was BBQ'd by a transplanted Texas boy who was married to my neighbor's daughter--wasn't real impressed with it.  But Gary assured me that it was probably poor BBQ (no question, it was) and that if I did it right I would be hooked.  

Gary's many  tutorials on brisket are so self explanatory I do believe I could have a successful brisket cook.  One of these days, I'll be throwing my first brisket in the MES.  It will be a "no stress, kick back and enjoy" smoke.  It might not be great, but I'm pretty sure it will be tasty--great just means more practice.

Its sure nice to have someone like Gary (and a lot of others on this forum) willing to share years of acquired knowledge.

Thanks Gary for the nice compliment. .  I had a friend and two different members tell me they would like to smoke a brisket, But Heard they were hard to do.  That was the main reason for the post.

Perfect timing for this thread Gary. I am actually doing one this weekend on my WSM for the 1st time. I have done a couple when I had the ECB (and before I spent any time reading or researching anything) and wasn't happy with the results. But I'm a lot more confident and have a lot more smokes under my belt so the brisket is going on early Saturday morning. 
 
I'm sure there will be a lot of Briskets smoked, Just trying to keep First timers from Stressing Out

I have read all these posts, and I am going to attempt to smoke mt first brisket. Going to look for a 10-12lbs one, figure the worst that can happen is that it will suck. But very good write up Gary.
