Well, late Friday I had a curve thrown at me...
I had planned on ribs for monday... 2 slabs baby back and 2 St. Louis cut when both my daughter and niece said brisket pleeeeease...
I dont know if that means my ribs are that bad or brisket that good (lol) but when the ladies ask for brisket...they get brisket...
Back in the freezer with the ribs...(good thing they'd only been out for a couple hours and were still froze solid in the fridge) and out with a little 12.5 on prime packer I had stashed.

So it trimmed up nice
I rubbed it with SPOG and a little cayenne and mild paprika for a bit of color.
I smoked it on my 18" bullet (boy that was a squeeze...lol...22" for briskets all.the way from now on) with kingsford blue bag and hickory chunks...
It probed done in about 13 1/2 hours.
It sliced perfect, was tender and juicy and had great texture.
Sorry no plated pics...I turned my back for two seconds after slicing the flat and turned back for a plated picture and it was half devoured...lol...I was lucky to get the one "bend" picture I did get...
