Well I figured it was time to do up a smoked meatloaf. Been many years ( not sure why ). Thought I would give Jeff's recipe a try.
All mixed up and loafed, into fridge for an hour.

Figured as long as smoker was fired up, may as well get some yard bird thighs seasoned up to toss in a couple hrs into the smoke. One rack Pit Boss Champion Chicken, one homemade.

Turned out pretty good, a little dry. I think my burger is a bit to lean, 90%.
Will try the chicken tomorrow evening.
 
Good looking loaf, thanks for reminding me I need to do one soon.

We always do at least two loaves, often three. Meatloaf freezes and reheats well, sliced and vac sealed in meal size or sandwich sized portions.

I would have liked to, but I was skeptical on the lean burger that we have. Didn't want them dry and falling apart, so only one for now.
