I've seen lots of loaf posts so I'll keep mine short and sweet....

5lbs of 80/20 chuck, chopped onion, 4 slices of bread, milk to soak the bread, 5 eggs and lots of paprika.


Put a small piece of foil under it for some reason.....

Then into the mes30 at top speed. Using Todd's Pitmaster's blend.


Not sure if I'm gonna mop the top later or not. Happy weekend everybody!!

Thank you! Getting ready to take it off in a few minutes once it hits 160 IT. MES30 was ALL OVER the place temp wise.

Had it set for 275F, maverick read anywhere from 249F to 295F depending on when I looked at it....forgot to mention I also

put some shaved Grana Padano cheese in the loaf!

Ok here it is done about 2 3/4 hours later at an IT of 162F.


Here it is plated. I'll have some sliced pics later, right now I must run errands.....

Thank you! As others have said, I will be doing my meatloafs like this from now on. So easy and such amazing results. I had no time for sliced pics so hopefully tomorrow.

Looks great!  I wish there were sliced pics to see if it had a less dense look instead of the dense pate look of fatties.  I'm doing two one pounders today.  My first smoked meatloaves.
