Whenever I smoke a large piece, I love to make meat candy. Basically beef ribs. They have become, by far, my favorite, but they take time.
They are SO easy.
1. Buy some ribs
2. Rub them up with Jeff's rub (not texas, but that does work)
3. Refrigerate at least 6 hrs, but I like 12 or better (if u can restrain yourself)
4. I tuck them up around whatever else I'm smoking, or, if they are the main, just smoke them
5. I will put them on the Yoder at midnight. At 22p
6. After morning java, I put them in a pan and douse them with sweet red wine I made. Cover and put back in the smoker for 2-3 hours
7. At this point they're done but sometimes I sear them at the end
Thay're like candy]
