Hello all, gonna do some smoking today. I will be smoking country style ribs, chicken, and ABTs. I was wondering what the safest arrangement is? I also need to add that I'm smoking in a vertical master forge. I figure ABTs at the top chicken in the middle then the CSRs. They will be put in a different times on how I figure everything will finish. If I am wrong in my arrangement please let me know and why. Thanks
 
Safest is Chicken on the bottom...JJ
 
It is more of a good Habit than a critical issue in your case. For instance,  you put the CSR in and start the cooking, we want everything done together. 3-4 hours later you put the Chix over the ribs, OMG! raw chix juice is dripping on the Ribs. Does it really matter? Only if the ribs will be pulled in the next 10 minutes...Don't really want raw chix juice on my cooked ribs. However in this scenario, yes the Salmonella laden chix juices are dripping on my ribs but the Chix and the Ribs have a couple more hours of cooking to go through and any and all Bacteria will be history before they come out, so it don't matter who is dripping on whom...JJ
