Just picked myself up a beautiful Bradley Electric smoker. Gonna do a bunch of ABT's and Chicken legs tomorrow.

Any advice on the Chicken Legs? Rub and leave them overnight or just rub before placing them in? Temp suggestions? I dont think I can get above 300 on this unit.

Welcome aboard, Jay! Glad you joined us. You've found a great place to learn and share ideas. Lots of friendly and knowledgeable folks here who enjoy helping one another.  I don't do Chicken Legs, but someone will be along who can givie you some experienced advice.  Good luck with that new Bradley, and just ask when you need help and you'll get plenty.  Happy smokin'!
 
welcome , jay. ive done the chicken rub both ways and i think as long as you get it on a half hour before it works fine. but overnight is cool too.

IMHO , chicken likes to be cooked hot and fast. 300 is good. but 275 will get you there. sometimes i like to smoke the chicken and then give it a blast on the gas grill to crisp the skin. one thing i will say i have learned about chicken and dry rubs,,,,less is more. i used to go way too heavy on the rub and it would come out gooey or burnt.....i have trained myself now to just coat the chicken lightly and its much nicer.

LOLLIPOP THEM!! You'll be thrilled!!! I hate the big giant (eww) vein and sinewy parts of a leg, as well as most people!!! In addition it smokes more evenly and creates a hugely impressive presentation!!!

I'm doin steelhead and tilapia tomorrow (I usually do a pork butts on the weekend, chix during the week or later Sunday and eat it during the week!)

Where in NC? I'm in Mint Hill, on the cusp of Clt city limits ;)
