Where did you see the rankings?

Cold smoking is when you smoke meat, cheese, fish, buts etc. at temps under 100° F.  The idea is to flavor the food with smoke, without cooking it.  Cheese, for example, would melt.

I'm sure the MES 30 is rated #1, above the MES 40, because it is cheaper.

I have one of each, and believe me, the MES 40 is MUCH BETTER, especially with the 1200 watt element.
