Unfortunately when I woke up this morning my grand daughter was playing with my tablet and I can't find the pics I took of the ribs I smoked yesterday, or any of the pics for that matter. The last couple of weeks I've been making Maple syrup, as I was boiling last week I thought man I want some Maple glazed ribs. So yesterday morning I fired up my 2 little evaporators to get the sap going and went in to prep some St. Louis style ribs. First I painted some fresh syrup on them, then dusted them with some of Malcolms Killer Hogs rub and sent them to the fridge for awhile. Fired up the smoker about 10 o'clock to get warmed up. 11:30 put the ribs in for a 3 hour tour, pulled them out to wrap. Before wrapping I drizzled more Maple syrup, rub, a lil apple juice, and a lil BBQ sauce on them. Then I remembered I bought some jalapeno jelly at the farmers market last year so I caked some of that on 1 of the slabs also. I left them wrapped for 3 more hours, pulled them out and the youngest grand daughter and I just destroyed them. She at almost a half a rack herself, and she's only 2 years old. By the way the jalapeno jelly was a good addition. Oh yeah, I smoked them with couple loads of Royal Oak briquettes, a bunch of corn cobs and some chunks of cherry wood. Now it's back to the evaporators. Sorry about no pics, but I had to tell ya about the jalapeno jelly addition. Have a great day everybody.
