Anyone have a maple blueberry sausage recipe that they’d be willing to share? Actually, any recipe for ann odd sausage combo would be good.
 
Can't help but I reluctantly bought some from a customer a couple of weeks ago.
Said it was one of their top sellouts and after trying it, I can understand why.
It was VERY good!
I need to stop in and get some more and see if we he will share some secrets!

Try this link (no pun intended) from Your Gonna Love It, on YouTube. I haven't made it but I eventually will. He has some good recipes and always does a short and sweet presentation. In the video info he gives the recipe per kilo and per lb of meat, and details the process.

Well, it’s good. Kind of brings a tart sweet flavor along with obviously blueberry. The wife really likes it.

Blueberry sausage recipe:

1 Kg ground pork
15g salt
15g raw sugar
75g dried blueberries (sweetened)
2g mace
2.5g gran garlic
2.5g onion powder
1g white pepper
2g black pepper
3g fresh minced sage
1g cinnamon
 
I did not add maple syrup. I would personally prefer to dip the sausage in on the bites I wanted with syrup but you could add in equal parts as sugar (using both)
 
Probably not exactly what you're looking for, but there's a shop near me that makes Minnesota-style summer sausage.
I made a 25 lb batch myself this year. I used PS Seasonings No. 957 old-fashioned as a base. 1 cup Wild Rice, 1 cup blueberries, 8 oz maple syrup, 8 oz honey (all of these could be increased by 50% if you want a little stronger taste). You can add ECA for little tang if that's your style, otherwise cubed cheese is a nice add as well.

The best part for me is that I have a wild blueberries and wild rice right on my property. I have a couple big maple trees that I tapped for the first time this year. My neighbor just down the road is a beekeeper so he provided the honey from a couple hives he keeps in my pasture. The meat came from one of the deer I harvested and pork trim from our family farm. Pretty much everything outside of the seasoning packet came from our land. This is one of my family's favorite treats.
