The cheese [emoji]129472[/emoji] won't be ready for a couple weeks, the salmon was just something I threw together real quick to take up space on an empty rack

Did you just remove the damper from the side? I have the Pro Series and am getting ready to do the mod. I don't want to have to drill holes. Never gave that a thought. Are you happy with the mod?

The damper was located to low and was to small. I ended up using a dremmel and some tin snips. It doesn't have to be pretty because the starter connection has 1/4 flange. It works great, It was 61 degrees out side and my cold smoke never got above 90 degrees. Before the mod I couldn't do cheese unless it was in the low 40s.
