Mailbox mod beef ribs

I bought the MES30 at HD bout a month ago. Made snack sticks with the tube smoker inside. Liked the smoke flavor but didn't like the heat generated. Got back from the mountains early, and decided to do a mailbox mod. Did the obligatory snack sticks yesterday with good results. I figured, "let's see what this thing can do for real". Hooked up some beef ribs with the big bad beef rub, put it in the MES with some Alder pellets in the can. Dinner should be good, although probably around 8pm. Beef ribs are def worth waiting for. i musy be new what is the mail box mod? you put the chips and fire inthe mail box or the food?
 
It's an electric smoker. You put the meat in the smoker, but the pellets that provide the smoke burn in the mailbox and travel to the smoker via the ductwork

very cool, i see it now. do you still use a pellet tube in the mailbox or do you just throw a buynch in there and light one side?
 
Yeah, I have 12" tube from Amazon. Supposed to go 4 hrs on full tube. That thing went 6 hrs yesterday. Airflow was awesome after I drilled (4)- 3/8" holes in mailbox door
 
Ribs took 9 hrs on the dot. Temps in MES held pretty steady @ 250°. Slight chew on them, but I chalk it up to me being a bit hungry. 205° and I pulled em regardless. Following the ribs, I put 2 pork butts from RD in it. 9pm they entered, it's 5:30am now, and they're only@ 163°. I yanked em from the MES and put them in oven. These are for a buddy that did my family a favor and I can't be late with dinner. Also, rain expected here on the East Coast after lunch. I'm learning this electric smoker is closer to the 1.5-2 hrs per lb than my stick burner. Nothing ventured, nothing gained, right?
