Finally found some Beef Chuck short ribs

And they were on sale for over half off. Actually asked the butcher because they had cut short ribs on display and I asked him if they had the whole rack of ribs. He hooked me up with 2 nice ones. My Safeway never has these. Seasoned with some Worcestershire and Lawrys, pepper, garlic and onion powder. Covered and rested over night in the fridge.

Two hours in.

Three hours and starting to get some nice pull back on the bones. Temping at 150 and 156.

Um, Yeah very happy with this cook. Temped at 205 and probe tender and rested in the oven for about 2 hours.

Seved up with some baked beans and a simple Cole slaw!! I am so done!! First time doing Beef ribs and I must say they were Goood!!! So rich!!

Hey, yea.
Those ribs look pretty meaty. And it's hard to beat $5/lb.
I recently got some beef back ribs at $4.50/lb from Costco. Of course not as meaty. But if you're new to beef ribs, look for some backs, I think you'll like 'em.

Yeah I could not pass up $5lb. Yeah want to try the back ribs from Costco next.

Beef ribs when they're available are incredibly expensive around these parts.
I hear you at the regular price I probably would have passed on these. Would have been over $100 for the two racks.
 
Looks great! What temp were you running at?
Thanks man! Pretty much between 250 and 275 with a few fluctuations over and under. Took about 7 hours and I didn't wrap until I pulled them off the smoker. Then I wrapped in foil and held in my oven for two hours or so.

Great rib cook and plate !
Hard to beat beef ribs and plate of slaw with beans! And that was a deal at $5 lb.
