Well after reading 3 books, referencing SMF abundantly I sold all of my previous hobby, homebrewing, and started the track towards hot smoking, cold smoking, and curing!

On order:

- Internals for a homemade curing chamber on the way. Just need to find the right bottom freezer fridge on the cheap.

- New Gen MES40 from Cabela's on the way, can't wait to try it out. On a side note I was this close (credit card out) to buying a Smokin-it model 3 but I couldn't bring my self to paying $160.00 in shipping. I like the simplistic nature and reliability of the Smokin-it design but when 25% of the cost is shipping I feel like I'm throwing money away. 

- Sausage stuffer, bacteria, mold, salts, casing, etc... on the way. Got the meat grinder for my birthday.

- A-Maze-N pellet smoker with pecan, cherry, oak, and the bbq blend sawdust and pellets.

- Makings for a smoke generator, fun project!

I think that's it, can't wait to go to town on it all... even though the weather is forcasted for all rain.

Sad to hear you had to sell off your homebrew gear. I'm getting set up to try all grain finally. You should be happy with the MES 40 - there are a lot of people on here that use them & you should never have a problem getting answers to any questions you may have. Best of luck to you sir!
