Wow! Great job Scott! ... making me hungry. Excellent smoke ring.

Love the jalapeno poppers. What is in the filling? We use cream cheese mixed with shredded colby jack. Never thought about cutting the peppers in half. We usually "T split" and fill the hollowed out inside.

Making me hungry. I got a packer in the freezer now. Sure would like some of yours to hold me over.

Do have a question about your smoker. Noticed a pretty good size baffle you have that feeds heat/smoke down that low in the chamber (I need to modify my baffle somehow). What kind of temps did you run during that smoke ?

Looks good. I have one on the smoker now. Its my second one. The first didn't turn out so great.
 
What was the final internal temp you cook to for briskets? What about other beef roasts?
 
What is the cocoa for? Does it make the bark darker? Plus if that is your first brisket then you nailed what so many have tried to do for years. I do bar-b-que cookoffs, ican tell you now just on presentation you would place. Keep smoking

I had cocoa braised short ribs at a fine dining establishment once and it was really good. Thought it be good in my rub. It was.

Great post I love your work. When it gets to what we call winter down here Im going to follow your lead & try a brisket .Not sold down here that I have found I will keep looking.
 
Wow and wow! That's some outstanding looking brisket (only hope my first will be as good as yours turned out). The cocoa powder was a nice touch, like coffee it enhances the flavor. Congratulations on an awesome smoke!
