I've never made LOX but I always use this brine when smoking salmon which works very well. Maybe it would be great for making LOX.
½ Gallon Dole pine-orange banana juice
½ cup non-Iodized salt
1/3 cup of white sugar
1 lb. (1 box) of brown sugar
12 ounces of molasses
Soak For 12 hrs. Do not rinse
Do you have a link to Pop's recipe?I use Pops recipe on everything else, but have always dry cured salmon for lox.
I will be interested to see how yours turns out if you decide on a wet brine cure.
