By popular demand, my circle decide they wanted brisket over ribs for the Super Bowl this year.
Trimmed up a whole packer that started at 19.6 lbs and decided to try my first batch of tallow from the trimmings.
So a couple of first for me. First batch of tallow and first brisket I've ever prepped using mustard for a binder for the Salt & Pepper rub.

19 1/2 hours in the Yoder with Smokehouse Blend pellets from Sam's.
The Signals system is a great tool for overnight cooks.

Brisket will never be better than when it's cut fresh on the cutting board and this one did not disappoint!
Another fun Super Bowl and a killer brisket to enjoy with the festivities.

Hope everyone enjoyed the weekend.
Have a good week everybody!
