Low Carb Squash Lasagna

Made a lasagna using yellow squash for the noodles and my sweet Italian sausage I made. Used meat slicer to cut squash. That was so much easier than the mandolin. I cut 5 mm but should of went 1/4". Grill squash to remove some moisture. Used fresh mozzarella which was a bit hard to grate. I let sit overnight after cooking so could cut easier. Most of it went to couple friends.

That looks like a great idea. I used to eat any type and amount of pasta without a thought, but now age and less activity have greatly limited my carb intake. I've done moussaka in the past with eggplant so I think I'll give something like this a shot. Thanks for posting!

Looks awesome.

I'm not a big pasta fan other than angel hair so we use squash also. Spaghetti squash is big in our house.
