This weekend I am smoking two 11 pound briskets and 4 racks of ribs ( on a rib rack with about one inch spacing). I have a NBBD and have never cooked this much food on it. I modified the smoker and use lump charcoal at a steady 225 degrees. Do you think I will need to allow a lot of extra time due to smoker being pretty much full? I have good results cooking 1 brisket for about 1 hour 15 min per pound. I have never cooked two before.
