Well drat, I went looking for my NOLA Andouille recipe, and I can't find it. I Googled it, but Norton says the website is a no-no. Does someone out there have a copy of it, please?

Making some Nola Andouille sausage today.
5 lbs pork
2 tsp cayenne
1 Tblsp paprika
1/4 cup chopped garlic
1/8 cup black pepper
3 Tblsp kosher salt
1 Tblsp thyme
1 tsp crushed red pepper
1 tsp cure
1/2 cup cold distilled water
And I'll convert to percentages too; someone on here long ago had a post on how to figure them; math was never my strong point, but his post made it easy. Can't wait for the local Super One to have their annual pork sale, Prairie Fresh brand is always as fresh as it gets.I think that's what I originally based my recipe on but I've tweeked it over the years and converted it to percentages.
