Hey names willy live in ny just bought a brinkman horizontal smoker and just got done smoking for the first time ever. I prepared a brisket for the family it was 6 lbs i cooked it for 6 hours with hickory n oak it had a great smell and color it Came out soft all the way threw little chewy in the center. Had trouble mainting heat kept dropping to 200degrees and shooting up to 300 degrees wen i added more wood i also added some charcoal more wood though. I am pretty happy with my first time not excited about it although i have a big family and do a lot of bbqs on a grill and i dont wanna let the family down on my new interest any tips pointers are greatly appreciated thank you very much and i look foward to chatting it up with you folks n hopefully i i learn how to smoke some great foodsThumbs Up
