looking for something different for Turkey day?

looking to make something smoked thats not the traditional turkey or ham but would go good with the thanksgiving meal

My wife and mom will make a turkey and i will smoke a second turkey for our crew but i'm looking to add something different,  

any and all ideas welcome

When we want something different, but still fancy my wife will make a stuffed flank steak or she will take a center cut pork roast and fillet it into a flat piece of meat about 12" x 14". Cover the meat with stuffing and roll & tie.
 
My Italian sister-in-law always makes Stuffed Artichokes and Lasagna along with Ham and Turkey on Thanksgiving. I thank God 'cause she cooks the S#!T out of the Turkey and no amount of Gravy helps with the choke down. I have offered many years to do the Bird but she insists that since I cook all the time, I should have a day off. Gotta love 'er. The Artichokes are part of the Antipasti Appetizers and the Lasagna is always good and is a nice compliment to the traditional...JJ
 
An aunt of mine lived in Alaska for many years and always makes salmon pie to bring to TG dinner. With smoked salmon in its amazing and always a favorite dish that we fight over.
