Fryer gets here today.

Plan om Fried Chicken tomorrow...

Have peanut oil.

Have fresh flour, eggs, buttermilk and spices.

Have looked at many, many YouTube videos....

What is your go to recipe?

HI! How is Upstate NY these days !?
Went to college @ Paul Smith's back in the 70s .
Worked in a few restaurants that breaded their fresh protein.
Here we go:
Dry off Chix and trim off if needed ?
3 stages to bread Chix.
1 Flour dust them, Some add spices? I do not !
2 whisk up buttermilk and eggs wash, If you beat them up good!? It will induce air to help blow up the product, but need to us ASAP.
Some add some spices to the egg wash, WHY!? To evenly distribute some ? Especially hot spices!, no hot spots!
Cover the entire protein so the breading will stick !
3 Breading use bread crumbs Homemade or bought ?
We used a clean Bus boy tote crate for the breading, did in bulk.
This is where it gets personal taste adding spices.
Had a restaurant that was Italian
Others were normal American based.
Suggestions are : we always free handed and used smell as a guide.
Not a fan of measurements. That's on You!
Add spices and add more if needed to yur taste ?
Salt, Pepper , Parsley
Onion, Garlic, Powder.
Oregano, Basil or Italian mixed
Brown sugar/ Molasses.
Grated cheese : Parm, Romanoe, Ect.
Peppers: Chili powder , Cayenne , Dried Mex Peppers, Ect.
Can add Rubs if you want to ? But to me it defeats the purpose of making yur Own !?
Also some use Adobe Mex ?
Keep in mind?
You can always also add a custom Dip to it, Just as wings do ?
BBQ sauce : Honey, Hot, ,, Orange marmalade/Horseradish ,.Ethic dips, ECT ?
Its not just KFC !?

Saw someone on tv making corden bleu. The breading the made was panko crumbs. The "trick" the used was to use a food processer to make half of the crumbs into a sand like consistency and then mix it with the other half of the crumbs. The used egg whites with either milk or heavy cream, not sure, as the binder. Looked good but I would have to spice up the crumbs. Might have to try it one of the days but my wife is the one who does the frying in the house.
 
It looks like you are in New York so I do not know what your Korean grocery store has to offer but I am betting that they exist. Since I first tried Korean Fried Chicken I have not wanted to make it any other way. They have a pre made mixes that hands out is the best. The one on the right of the picture below. There are other options but this is my favorite. You can buy it on amazon but it is way more expensive.

All in all, not bad! A little lacking in flavor, but I have a starting point to modify.

So far, impressed with the fryer.
Easy controls maintains temp .

Big test will be the oil filtration test as soon as the oil is cool....

Question?
What order did you do the Chicken?
Flour, Wet mix, Breading.
I would add an egg to the wet.
Need to up the spices, should be able to the spices on the breading.
Otherwise ? LOOKS GOOD! YUM!

I use a large automotive funnel into the original container with a coffee filter. It makes the oil clean enough to use many times.

No I do not use the same funnel on my cars. :emoji_sunglasses:

EDIT: Looked back at the photo of your fryer. If that works cool. If not look up.
