Look what I get to smoke

Here's a pic I took yesterday of Bobby the deck hand holding a 38# king Salmon that my fising buddy (standing with him) caught yesterday right outside the Golden Gate Bridge.

He's bringing me the fish to process and vacuum for a future smoke. Hopefully he will just give me one whole side to deal with for my freezer is filling up fast.

This pup will generate lots of jerky, nuggets and filets.

Crap, Not only do I need to process the 15 pounder we brought in earlier in the day but he just dropped off one whole side of the above monster for me to do whatever I want to, to it,meaning deciding on if it will be all jerky, nuggets, filets or yes a certain percentage of each.  Oh joy!

Oh and just got a text from my wife that she and Jimmy (our above fishing buddy) are going back out tomorrow.  Go Girl!
