Long time Homebrewer, finally made the leap into smoking!

Hey all. just got myself an ECB. 

After lots of reading, I managed to add a real thermo and drill my coal pan. Started my test burn this afternoon @ 4pm. By 4:45 it heated up to 275 degrees. Another 20 minutes later and it was 250. And its now 830, and it STILL at 250, original load of lump. I'm pretty excited. From what I've read, more people have issues with the ECB heating up, not cooling down. 

So my question is this. What is the proper way to get it to 225? Less lump initially? Less air? More air?

I just ordered some BGE felt seal and a weber 3 home damper, which will be my next mods, followed by externally mounted legs and stand alone fire bowl. 

I am planning my first smoke this weekend. I'm thinking babybacks. From what I gather, it seems pretty hard to mess them up.
