Does it look like Kielbasa? I liked the flavour and the texture, but (as I am used to 30%fat chorizo) I found it kind of lean and therefore a bit dry.

Any feedback is well received.

Looks good, nice work. The larger pieces of meat can be more like ham. Try upping your fat ratio and grind it fine or emulsify. I generally add phosphate (STPP) to the mix, this helps hold the moisture.

My cut shot for comparison. Yours looks very similar, this sausage is not dry
