I hear the words, but don't understand. I smoke my meat with my pellet tube in my MES40 with mailbox mod and get differences based on teh wood i use. The results are fantastic. That's good enough for us. We're not tying up money and space for multiple cookers, and do not want to mess with charcoal.
I could and have in the past. Now I enjoy having my choices and still need/want to add a couple more.
We all do this for our own enjoyment!
You do you.

I’ve been in double digits with grills and smokers. Chicken and Bacon were great on the Bradley, Kamado did everything, pit barrel and wsm were similar but different sizes so depends on quantity, Orion, acorn , acorn jr, 2 Weber kettles a couple of gas grills, then the fire pit with rotisserie. Cheap hobby compared to classic cars and boats.
Down to 5 or 6 now, tossing them as they age out. Definitely all have their own flavor profiles. Recently got an offset, ultimately it will be the Recteq, offset, Weber kettle and Weber gas grills, ( and the firepit rotisserie isn’t going anywhere either).
You guys are crazy, but in a goodish way. :D For us, it's just two 77 year olds who only cook for ourselves, and with diminishing appetites, to boot. I'm here to pick up tips and make what little i do better.

I have to jump in on this conversation. I started out with a standard 22” Weber Kettle. I was single at the time and it was great for me and my buddies grilling and drinking beer. Then as life went on I got married had kids, I need more square footage on the Weber Kettle, so I up sized the the kettle to the 26”. I kept the 22” for smaller cooks. Lastly, I have a 22” Weber Smokey Mountain (WSM) that I use for looong overnight cooks.
Each one has a purpose. Maybe one day I will down size…who knows. But for now…I’m good!
