Howdy all,
I'm looking forward to learning all I can (temperatures, times and recipes). I plan on building my own smoke house this spring/summer. I'll try to post pictures as I build. Up till now I've been making my own deer jerky, snack sticks and summer sausage in the oven and I think my wife is getting tired of every thing having a smoke flavor.

I figure anyone building a smoke HOUSE instead of a smokER is dead serious about smoking! Post pics of that thing when complete.

And remember, there is a good chance the light at the end of the tunnel is a TRAIN.
