Leftover smoked turkey pot pie...

South Louisiana-Yes, it is HOT
Had a lot of meat leftover from the 2 turkeys I brine/cured and smoked last weekend. With a record low of 38* tonight, perfect for pot pies! I pulled the meat off bones, boiled down all the bones and scraps with a little water to make a stock. I skimmed the fat and saved that for simmering down the onions and making a roux.

Put it all together and it filled up a 5 gallon pot; I'll have plenty to share with the guys @ the firehouse. I made a small one tonight in a 9X13" pyrex dish. I used Mrs. B's biscuits for the crust on top...

Thanks fellas! Can taste the apple wood smoke inda gravy. Turned out pretty good, I'm sure the guys @ the firehouse will like it.

Dave, I'll post the recipe for ya if ya want it....it's pretty easy to put together. First part of it is to smoke a turkey using YOUR injection! <wink>
