With the pretty generic flavor profile I used on my recent country style pork ribs cook I knew I could do plenty with the meat.

A fine chop, dusting of taco seasoning, and some pan fry action gave me some wonderful crispy carnitas bliss.

I combined that with some homemade taco shells for a fantastic dinner. I just pan fried the yellow corn tortillas and sorta folded them over when the time was right. The best crispy taco shell on earth.

I'd eat more tonight in a heartbeat but I think we are gonna dive in to some brats shortly I smoked the other day along side those country style ribs.
 
Wo those look great! I tried to make quesadilla's with my left over carnitas couple days ago with low carb tortilla. Did not work out. Ended up just eating the filling.

Unfortunately I am familiar with the issue you are talking about. Low carb tortillas just don't work that way. Best you can do with those is nuke 'em. While we try to keep carbs low I will happily eat anything we make from scratch, fresh bread, tortillas, ice-cream etc. No good substitute for corn and tacos.
