Left overs: Chicken Salad (No Mayo)

I post quite a bit of my cooks, but never of what we do with the left overs. Here is what I did with some left over Chicken Breast from our cook yesterday. I am not a fan of Mayo, so here is my take on chicken salad

Easy recipe:
- Shredded chicken
- 1/4 Cup Red Onion
- 1/4 Cup Feta Cheese
- 1/2 Cup Kalamata olives sliced
- 1/2 Cup Cilantro Chopped
- 1/4 Cup Celery Chopped

Dressing:
- 2 TBS EVOO (I use smoked)
- 1/2 TBS White Vinegar
- 1/2 TBS Red Wine Vinegar
- 1 TBS Hot Water
- 1 tsp Minced Garlic
- 1 tsp Dijon Mustard
- 1/4 tsp Sea Salt
- 1/4 tsp Ground Black Pepper
-1/4 tsp Dried Thyme

Had 2 of 4 left over breasts from dinner

I started by shredding the chicken breast

Made a dressing using Dijon mustard, smoked EVOO, vinegar, garlic, S&P

Chopped up some celery, cilantro, red onion, olives and feta cheese

Ready for sandwiches this week

Definitely a great recipe especially for those that don't go for the mayo.

Nice . I do a Mexican lasagna , taco's or enchilada's with the left overs . I'll have to mix some of this up next time . Kids would love it .

Thanks, I am not a huge fan of mayo and this is much healthier.
