Hello All,
So here I am just starting the coolest thing ever.....Smoking meat!!!!!
I'm a chef by trade but I love the BBQ more than anything.
I have a Char-Griller Delux Griller w/ SFB. I did my research and used some steel to make a baffle, changed the coal rack and used dryer venting to extend the stack.
My confusion is about the size of fire I need to be most affective. I'm just not too sure how much , how little of charcoal to use. I use the chunk charcoal and have several different woods on hand. I read the 5 day course from Jeff (excellent, by the way) but it didn't touch too much on fire size.
Any info would help

Usually a full chimney, or about 2-2.5 lbs is a good start. Depends on what you are smoking too.. poultry maybe use a bit more, you want to smoke that stuff upwards of 250°
 
Good luck Snowcapn, Get some meat and give it whirl. Experience is worth tenfold. Don't you dare smile when your mouth is watering over that first bite of successful smoke. Thin blue smoke and a couple cold ones seems to help.
 
So how does one give up the ol q view? Its lookin pretty good.
