Lazy night Cobb Salad

Busy couple work days so no leftovers and no time for something fancy. Got some of my home cured bacon out and some frozen chicken breast. Into the microwave to thaw the bacon and into the Instant Pot for some speedy shredded chicken. Seasoned up with a nice local Amish poultry blend. Pulled everything together into a Cobb Salad. Shredded lettuce, avocado, hard boiled eggs, tomato, chicken , bacon and ranch dressing. I like to add some capers on my chicken and some fresh cracked pepper on the eggs. Quick and tasty!

Are you kidding me Jeff !! Lol. I'll agree with "quick meal" but sure looks fancy to me! Even on a quick meal you can make something look Gourmet!!. Nice work man. And thats my kind of salad right there!

Cobb's my favorite for a "meal salad" has it all. I'd bang yours. Definitely my kind of salad. Not to mention pretty lol
Definitely mine as well followed by a Caesar with homemade dressing and plenty of chicken.
 
I love cob salad. And yours looks fantastic! I really like how you kept the bacon whole like that. Gives it a nice touch.

Nothing simple about this. If my wife saw this cobb salad picture, I’d have the not so simple task of sourcing all the ingredients and just trying to make it look good as yours!
