When you guys layer your wood how do you do it? I usually just put my hot lit coals in the middle with unlit around. That works great for pork butts cuz they take so long. For ribs i usually put them right next to the burning coals and i get a nice sweet smell right away but as soon as i get my temp right i can't smell any apple smoke anymore and when my ribs are done none of the wood burned sometimes. Same with brisket flats i have done 3. The first one i didn't wrap and that thing took forever the next 2 i wrapped at 160 internal and they only took about 5 hrs with 250F pit. But it seems like I'm not getting a lot of smoke. So do you guys just lay your wood right on top of the lit coals? When i burry them none of the wood ever burns. thanks guys.
