I wasn't sure where to put this since it covered more than one of the categories. over the holiday weekend I fired up the smoker and tried a few different things.
1. Pork Rib Tips (first time smoking Ribs)
2. Chicken (first time smoking chicken)
3. Pheasant (shot by my son and myself)

I made my own dry rub with
1. Paprika
2. Cayenne Pepper
3. Coarse Salt
4. Brown Sugar
5. Garlic Powder and

I rubbed it on and let it sit for an hour or so. Smoker was at about 225 and this took about 4 and a half hours give or take.

Great lookin' smoke, hope they tasted as good as they looked.

Everything came out really good I was pretty happy with all of it.
I laid it out on the smoker like this

and then just kept an eye on it and moved it around if needed. The Ribs were very tasty and had a good smoke to them. The Chicken I was surprised a bit because it did not get really smokey but it still had good flavor. The pheasants came out nice I did not use the rub on them (my son does not like the spice) so I just put some Lowery's seasoned salt on them. I was surprised by how much smoke they took on. They were really smokey but not so that it was too much.

All in all it was a nice mixture of tastes.

This is a tough crowed to try to hang with. There is a lot of experience here don't want to look like a complete newb. Gotta get my rating up somehow.

That all looks great nice job
