The white cheddar bread sound like a fantastic idea.
Great flavor profile . It's a go to in the colder months for chili or grilled cheese .
Thanks for lookin' .
I have not used the method you have for getting the marinade to penetrate that deeply into the meat. I donated the meat poker a long time ago. May need to find another method for that. Also need to get the vacuum container. But it is now on the to-do list.
I use that vac container all the time . Does a great job short notice . If you do the Italian dressing , watch out not to get one that's to sweet . Unless you like that . Olive oil and garlic is good too .
Love me some pork steaks and those look amazing Rich! I always forget about that vacuum attachment for my food saver.
Yeah , me too . I hand cut a couple when I make sausage , and I make sausage about once a month . So I have a good stock pile . Love the vac container for all kinds of stuff .
Thanks for lookin' " Skinny " . Lol .

My fav is a 48 knife Jaccard. The 45 blade looks good too.

I buy kitchen gadgets. It’s a bad habit. One day the wife had had it and the meat poker was one of the 1/2 dozen things that went into the donate pile to calm things down. :emoji_laughing: :emoji_laughing: :emoji_laughing: :emoji_laughing:

BEAUTIFUL LOOKING STEAKS AND A GREAT JOB ALL AROUND
Thanks Ray . Had a half for breakfast the next morning .
I HAVE THREE BUTTS IN MY FREEZER I WAS WONDERING WHAT TO DO WITH INSTEAD OF MAKING SAUSAGE.
Cut a few boneless steaks , then cut out a hunk and put that on the spinner . 185 / 190 and slice it up .
I just seared up a hunk and finished it in the oven .

Cut up with some beans and BBQ sauce .

Those sure look great Rich and it's time for some pork steak at my house!
Thanks . I hadn't been buying them because of price . Cutting them myself makes it affordable , kind of .
We also keep some dressing on hand for the marinade and adds some nice flavors.
I like it for quick grilling mostly , but it was a good add for these .
Sounds and looks like a great meal.
Thank you sir .
Never marinated with italian before or used a vacuum container to help. Will give it a try next time. They look very tasty.
Try it on some boneless skinless chicken breast . Then give them a quick grill over the fire .

Looks great. I ‘discovered’ pork steaks at Southside Market in Elgin TX a few years ago and they became a staple for us. Recently found them already sliced at our local Walmart neighborhood market. Smoked for a little while and then seared. Yummmm

Been hand cutting steaks when I make sausage . Usually get 3 decent boneless steaks from a butt .
Had these thawed out for today , but yesterday my Son informed me that he wanted to make a pasta dish .
So I decided to get them going for Saturday's supper .

Got out the " hole poker " and worked them over .

Then went back to the 80's and got some zesty Italian ( always in stock in my pantry )

Gave 'em a good soak ,

Then under vacuum for a few hours .

Plan was the 26" kettle , but the SmokeFire always gets the call last minute .
Only bummer was Bear mountain pellets didn't give of much smoke .
Cooked over a drip pan at 225 for a couple hours .
Bumped the heat , and removed the pan .

SBR's brushed on . Getting close .

While that was going , I baked off a couple loaves of bread .
View attachment 723883
Jalapeno / white cheddar for the meal . Other loaf is for morning toast .
View attachment 723887
Steaks finished up . Nice char from the open design of the Weber .
Really tender too . Wasn't sure about that , but the marinade and the hold under vac helps .

Daughter made up some pasta salad with pepperoni , motz and tomatoes .
Steamer corn . Came together pretty good for a change in plans .

Opps ! Got a 3rd loaf in the oven this morning . Starting to smell good in here , better go look .
Thats crazy,,,,exactly what I had for dinner tonight..we must be on the same plane.

Rich, everything looks so tasty… pork steaks are one of my top three fav cooks… and yours with the bit of char… just top notch!

Not a huge pasta and bread fan… but with the looks of those… I’d definitely indulge myself!

BTW, I am betting the old trusty “hole poker” helped infuse a bunch of tasty flavor into them steaks!

Awesome work by all Rich! 🤤
