This morning on a whim, I craved a smoked meat loaf......being lazy, I did not wanna go out so I looked around the house and found the following items I made two meat loafs with:
Ground chuck
Onions
Bell peppers
Jalepenos
Garlic
Shredded Cheese
Parmesan Cheese
Mustard
My home made spices
My home made BBQ sauce
Eggs
Bread crumbs
I had a couple 8 x 4" tin loaf pans that I popped holes in to drain the grease and fat......and stuck them in the MES at 230* until the meat hit 165*....let it sit for a bit and took one to my sister in law and my wife and I had the other....and I gotta say, it was the BEST Loaf I ever ate.
Oh, and once the meat hit 140*, I cut the front and back of the tin to allow more hickory smoke to infiltrate these gems!
