Made a pound up last month. Used 19mm mahogany collagen.

Took while to get to my liking for being dry.

I used to buy Landjaeger at a German meat shop, but I've never made it. I need to check into it and I believe I have some 19mm collagen :-)
I always wondered why they flattened it....
 
They flatten it so when out in the field the LJ dont roll around. I dont have presses anymore but i have used plastic trays and some weight. After fermenting.
 
only couple hours then hung in front with a 4" fan in the corner. in the fridge now paper bag.
