Thanks, had trouble trying to grind the second run through the 4 mm plate, I think I just did not cool everything down for the second run...including the grind. So just went ahead and made 39 - 6 oz patties from the 8 mm grind.

Doing the second grind on the breakfast sausage in a few so we will see if that was the problem.
 
Testing out the new grinder, burger mix of brisket, chuck, sirloin and a couple pounds of bacon.
One of my markets has the following ground meat (in bulk or some in patties): Lamb, bison, elk, pork, chicken and about 6 options for beef. For some reason they have a chuck & brisket blend that is a few cents cheaper than the 80/20 beef. It's just fatty enough it's best on the grill and the flavor is really good.

We were supposed to head home from camping Monday. But one of the motors on the main slide failed. Parts won't be here until Wednesday. I could have brought it in manually. But said the heck with it! We always bring a couple extra meals in case we decide on something different for dinner in the event of weather or other occurrences. Yesterday's grub was citrus shrimp and corn on the cob. Grilled on the smokey Joe. With mac salad.

Things being broke isn't fun... have a couple here from Missouri had there starter go out on their truck. But better here than on the side of the highway. Camping here also... just a bit more primitive.

Today is pack up day... but I'll post up the info on gizzards when we get home. As far as the golf game... had 3 shots to get your ball to the 50 yard line. Kinda tough when you can't see your ball after the first shot.

Did some Spare Ribs. It was just we 2. Lazy day.

Here they are fresh on the smoker. Got a lot of smoke to begin with.

Finished nicely. A little darker than I like don't know why. Smoked for 3 hours, then 2 hours wrapped.

They were very good and tender. Maybe to avoid the too dark color, I will wrap them longer and smoke open for less time. I set it at 225 for the whole time.
