Day 1 I cooked up 3 Tri Tip, 2 Sirloin roasts, and a couple of dozen Moink Balls. I did a reverse sear on the Tri Tip, smoking it at 250 until it had a IT of 130, then threw it on the grill. A couple of minutes each side. The roasts were smoked to IT of 135 then pulled. This was my first attempt at moink balls. I went to a BBQ at a friend’s house yesterday, and figured I would try them out on a few people to see what they thought. They lasted about 1/2 hour, so I got my answer. I smoked everything with a Apple/Hickory/Oak pellets mix. I really like the flavor of that blend. Here are some picks from the cook.
Today I smoked up some ribs. 3 racks of baby backs, and 3 racks of spares. I smoked the baby backs with 50/50 peach and apple wood pellets, at 250 degrees. The spares were smoked with a 50/50 pecan and hickory wood pellets. They both came out awesome. The picture of the spares look a little dark, but in reality they're a deep red color. The camera makes them look like there a bit burnt.

All in all it was a very good cook this weekend. I was very impressed on how the tube smoker worked. Not once did it falter. I definitely would recommend it to anyone who has a gasser, and does not want to worry about wood chips or chunks catching on fire. Now I can set the burner to the temp I want, light up the tube smoker, and enjoy BBQing. Thank you to A-Maze-N Smokers for superb products. Hope everyone weekend was as enjoyable as mine.
