I did some beef ribs for the first time on Labor Day.  Basic 50/50 salt & peper rub.  I smoked it on my UDS with the 3-2-1 method at about 250 degrees (where my drum likes to run).  The last hour I coated it a few times with Sweet Baby Rays.  

It turned out fantastic!  Nice, juicy and tender with a little bit of bark.  I'll be doing these again. Yum.
