Korean rib, short rib and half pork butt/ also new water pan

Got everything from the butcher, but was little spendy at 4.19 a pound. They get really good meat tho. Wanted to try a butt with solution injected in it. Water pan I built. Myself besides the bending part. It’s 1/8” stainless. Holds 5.5 gallons and really keeps temps down and let’s me have a bigger fire which I wanted. Cooking 225 with mainly plum and some oak. Top pic was first smoke last night with water pan.
 
That Korean rib from last night looks great!
Looks like the water pan is working good.

Nice 50! I’m nephews 70 struggles to pull me in 2nd lol. I did the ribs last night.

Deal. I’m 195 pounds so I hope it’s pumped up and geared down lol. Smoked them last night and ate them today

The short rib is done here. Butt is going slow. Only at 163 it says. I was hoping to go for a ride tonight. It’s going at 225-250. Going to crank the temp up. Pulled the rib at 197. Didn’t bribe it so hopefully it’s tender
 
The butt just didn’t wanna come up on temp fast enough for me and it was only half butt. Took like 10+ hours to get to 183 then I got tired and layed down. Accidentally when to bed. Got up at 3:30 am and pulled it off. Didn’t care anymore I’ll eat it anyway lol. Had it at 250 the last 4 hours or so. Idk maybe tough piece of meat. I usually did 8 pounders in 10 hours. This one was like 4 pounds idk what the deal was. Beef rib was done at 6 hours or less. Wanted to get out on the bike but no lol
