Knife Set - Recommendations?

My young son was dumb enough to get roped into CUTCO's absolutely criminal vertical marketing scheme. You can't buy CUTCO except through one of their salesman.

It's too bad because the knives they make are really first rate. He had to buy (I should say I bought because he was broke of course!) a complete set so I got to try them all. They are well made of good steel. But they are expensive and their salesmen are required to up-sell you.

I'm just so turned off by the way they sell their knives, and so are a bunch of Attorneys General across the country who have filed multiple lawsuits againt them. CUTCO is good but nothing special. Skip the hassle!
 
I agree. In fact, you might want to just buy a large chef's knife and alert all your family and friends what set you have. Kids, wife, family members always asking what to buy as gifts and this is an easy...foolproof gift.

I have a nice Henkels set. They've started selling some nice (not highest quality) Henkels at various department stores like Target. I'm sure they're just fine for most situations you're likely to find yourself in.
 
Grab your yellow pages and check under restaurant supply, call around and find a place that sells the dexter-russell knives to grocery stores for meat cutters.
You can get a 6-7 inch boning knife for 10-20 bucks. Its easily the most used knife, just get a good sharpening steel (25 bucks or so) with it and learn to use the steel, you'll always have a sharp edge.
If you need a larger knife get 10 inch breaker knife (30 - 40 bucks) this would be great for cutting down cryo-vac meat, slicing ribeyes, strips, etc.

I cut meat for a long time, and these are basically the 3 most used items, you might also ask a meat cutter from your favorite grocery store, they can tell you where they pick theres up at. I have a nice set of cuttlery (cant think of the name) but I always reach for those 2 knives. That boning knife can handle anything.
And if you go this route, buy the comfort grip handles, they are a few bucks more, but worth it after using the same knife for quite a while, your hand wont hurt so much.
 
Don't recall if I mentioned but the Butchers around here will sharpen your knives for free. NO ONE gets a better edge.
