Hello all!

I'm a 30-year-old dude that's all about the homemade meat products (sausages, jerky, etc.) and looking for a place to settle in and have a good laugh or chat about the homemade meats. My name is Ricky, and I currently use a MasterBuilt smoker (model #20078715) for all of my smoking and a generic grill with a side fire-box for anything I feel like grilling or manually smoking. I used to think the electric smokers were gigantic loophole cheating mechanisms, until I used one... I'll agree that the smoke isn't quite as fine as if you were to do it yourself, but I can go out, throw a few chips into the smoker, and let it sit for an hour while I go and do something else.

I haven't quite mastered the smoking on an offset-smoker-grill setup yet, and tend to have issues with either the temp getting too hot with the smoke being perfect, or the smoke being too thick and having too low of a temperature. Not sure what my issue is, but that's a thread for another day.

For now, I just wanted to drop in, say hello, and check out some neat stuff..

Ricky, welcome to SMF!  Glad you are here and enjoying the addiction.  There are plenty of MES and offset owners here so you'll get your smoke/temp issues figured out in no time.  Sounds like an airflow issue to me, but I don't own an offset, so the experts should be along shortly.
