Click to expand... 5# ground pork 1 cup cold red wine (sangria works) 1 cup chopped fresh parsley 5 tsp kosher salt (i usually use Morton's) 4 or 5 minced garlic cloves 1 tbsp fresh ground pepper 3 tsp cayenne 5 tbsp fennel seed 2 tsp crushed chili pepper 5 tbsp paprika 2 tsp anise seed 1 tsp #1 cure Actually we found this at TheSpicySausage.com I just added anise because I like anise and I use #1 cure in all my sausage whether it's smoked or not. I did a post here about a year ago called "Hot Italian Found" if you can find it....
