Kettle Thighs - Todays Enchiladas

Yesterday I picked up a pack of the biggest chicken thighs I ever run across, ten thighs weighed 8lbs. I fired up a chimney full of coals and indirected the thighs on the Weber, coals on one end, meat on the other.

I like to give them a little baste with Sweet Baby Ray's, it's my go to sauce

Sauteed zukes and onion, leftover mac & cheese made for a easy peasy dinner

Now I've got a nice load of leftover chicken thighs to skin and debone. Been thinking about chicken-cheese enchiladas for a few days now, that's what'll be on tap for tonight's dinner. Thanks for looking. RAY

Oh yeah! Looks very tasty. Dang! The chicken farmer must make his birds run laps around the coop each day. They are really big!
 
Thank you all so much for the kind comments and likes, I truly do appreciate them. I took three of those monster thighs and skinned and deboned them. I chopped them up pretty good along with some onion, diced chilis, jack cheese, and mixed it all up in some hot salsa, chili powder, and a touch of cayenne. Dammit, I forgot the black olives! It made four nice enchiladas, not puny and a little spicy, the way I like 'em.

I rolled them up and had just enough jack on hand to cover the dish, into a 325º oven.

Fifty minutes later we were ready to rock!

After hitting two markets I gave up on finding a ripe avocado. I used some straight sour cream on the side, cuts into the heat and adds a really nice component of flavor. Yeah, they're a little spicey!

Enchiladas, tacos, or flautas always require beer, no wine tonight. Thanks for looking! RAY
 
Those thighs looked awesome off the grill and in those lovely enchiladas. I’m totally sold on using the chicken leftovers for enchiladas, so I’m sure that those were fantastic. Great job.

Thanks John! Congrats on your carousel ride! What are you doing with the leftover turkey? I tried making turkey enchiladas once years back and didn't care much for them, probably why I only cook one turkey a year. RAY

That's for sure Richie, enchiladas are one of the highlights of Mexican cuisine. They can be made out of a number of things besides chicken, beef, pulled pork (carnitas), shrimp, and crab. It's easy to season the leftover meat, which is all I ever use for enchiladas, and all one really has to be careful about is how spicy to make them, I'm usually a "medium" kind of guy when it comes to heat. One trick I've practiced over the years is throwing the flour tortilla into the micro for 15 seconds, makes them more pliable and less likely to split. Bake them with red or green sauce, both work well, top with jack cheese in a 325º oven for 45 minutes, just a great way to use leftovers, especially pulled pork.

All in all those big thighs turned out to be a lot of bang for the buck at 99¢ a pound. Two BBQ chicken dinners, two double enchilada dinners, and a giant triple decker chicken - cheddar sanny. Not bad for $7.98. RAY
